Unable to remember, when I had last had breakfast(sigh! Hostel life), I took it upon myself to cook some American style silver dollar pancakes. Why you ask? Well, pancakes are easy to make and score full marks on the yummy meter. It is light and fluffy and a brilliant start to your day. Since pancakes are a little salty, I always prefer to keep something sweet on the side. Fruits to be precise. Mom will be spying from the corner of the room, gauging if what I consumed in the morning is effectively ruining my health. Here in the picture is my favorite, pancakes with a side of apple cinnamon caramel(essentially the apple pie filling) and a scoop of vanilla ice-cream with a sprig of mint on top. O____O Num num num num! Satisfaction guaranteed.
Ingredients
For the Pancake>
1) 130 gms or 4 3/4 oz Plain flour.
2) 1 tsp Baking Powder.
3) 1/2 tsp salt.
4) 2 tbsp Castor Sugar.
5) 130 ml milk.
6) 1 egg slightly beaten.
7) 2 tbsp melted butter.
For the Filling>
1) I used a small apple(I was not gonna indulge everyone!)
2) Juice from half a lemon. One can use a little apple juice, as well.
3) 1/2 tsp Cinnamon powder
4) 1/2 tsp Nutmeg powder.
5) 1/2 tsp Garam Masala(All spice).
6) 1/2 cup sugar( Yup I like it a little sweet. Reduce it acc to taste)
7) A pinch of salt.
8) Water to dilute
Recipe
1) Mix the pancake ingredients together to make a mixture. The desired consistency is a little thick but not so thick that the hand beater doesn't move through it. XD Beat well until smooth.
2) Brush a pan(on medium heat), with a little butter. Scoop the pancake mixture into the pan. Do not spread.
3) Turn to the other side when the side facing upwards has little bubbles forming on it. (Each side should be cooked for approximately 2 mins) After the pancake is cooked, keep aside.
4) Blanch the apple pieces in boiling water for a min or two.
5) Make a mixture out of everything else. Keep stirring the mixture so that lumps do not form. The water should make the mixture a little runny.
6) Pour the mixture into a pan on medium heat. Keep stirring for sometime until the mixture congeals or thickens quite a little bit.
7) Add the blanched apples. Cover the pan and let it cook for a minute. Remove from heat and let it cool.
8) Plate the stack of pancakes with the apple cinnamon mix and scoop out some vanilla ice-cream for an amazing breakfast. Easy breezy! :D Serve it with some pumpkin spiced cafe? (Recipe soon!)
Pancake tastes amazing with Nutella and desiccated(toasted) coconut, Nutella and banana, Yogurt and fruits, Hazelnut and chocolate Ganache yada yada yada! The list is endless. ^__^
